Norwegian Waffle Recipe

Waffles in Norway are everyday food, not a weekend occasion. They come off a heart-shaped iron in a single round of five, they are eaten soft rather than crisp, and the cardamom in the batter is what makes them Norwegian rather than anything else.

Ingredients

Makes around 10 waffles.

  • 3.5 oz butter
  • 4 eggs
  • 4–5 tablespoons sugar
  • 1/4 teaspoon cardamom
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 2 cups milk

Method

  1. Melt the butter.
  2. Combine in a bowl with the remaining ingredients and beat until smooth.
  3. Let the batter rest for around 15 minutes. It should have the texture of a thick sauce — if it is too stiff, add a little cold water.
  4. Bake on a greased hot waffle iron.

How to serve them

Freshly baked and still lukewarm, they are delicious with sour cream and jam. Cold, they are good with butter and brunost — the brown goat cheese that is close to a national taste in Norway, sweet and faintly caramelised.

Våffeldagen, the day for them
